Ingredients
225g Self Raising Flour
¼ Teaspoon of Bicarbonate of Soda
Pinch of Salt
75g Vegan Spread – I used Pure Sunflower
150g Caster Sugar
25g Soft Dark Brown Sugar
1 Tablespoon of Milled Linseed mixed with 3 Tablespoons of Water
4 Very Ripe Medium Bananas – Mashed
100g of Chopped Walnuts
Method
Heat oven to 170 degrees centigrade, grease and line a 1kg loaf tin.
Beat vegan spread and sugars for a few minutes add the rest of the ingredients and mix well until combined.
Bake for 1 hour and 15 minutes.
