These sweetcorn fritters taste delicious and are super simple to make, I even serve them for breakfast
Sweetcorn Fritters – Serves 3
Shopping List
1 Red Pepper – Diced
3 Spring Onions – Finely Sliced
1 Green Chilli – Finely Chopped
1 Thumb Sized Piece of Ginger – Grated
1 Tin of Sweetcorn – Drained
10 of Coriander – Finely Chopped
1 Teaspoon of Paprika
Zest of 1 Lime
75g of Self Raising Flour
1 Tablespoon of Milled Linseed combined with 3 Tablespoons of Water
Method
Place all the ingredients in a large mixing bowl and stir thoroughly to combine.
Line 2 baking trays with baking paper and divide the mixture into 9.
Bake in a pre-heated oven at 200 Degrees Centigrade for 20 minutes (flip the fritters halfway through cooking).
I serve the fritters with Baby Leaf Salad.
