A great little breakfast, that can be whipped up in no time. So quick that you don’t have to wait for the weekend to enjoy. Serve the pancakes with any type of fruit for one of your five a day.

Shopping List
125g Self Raising Flour
1 Tablespoon of Milled Linseed combined with 3 Tablespoons of Water
6 Tablespoons of Plant Milk (I used Alpro)
Oil for frying
Fruit(s) of your choice and icing sugar to serve
Method
Add the Self Raising Flour to a large bowl and make a well in the centre.
Add the Linseed and Water mix and Half the Plant Milk. Carefully mix the ingredients while slowly adding the remaining milk until you are left with a smooth batter.
Take a lightly oiled non stick frying pan and place over a medium heat.
Drop teaspoonfuls of the batter into the pan and cook for about 3 minutes flipping halfway through the cooking time.
Serve with fruit and a light dusting of icing sugar.
