Carrot and Coriander Soup– Serves 4
Shopping List
2 Onions – Diced
750g Carrots – Peeled and Chopped
30g of Fresh Coriander
1 Litre of Vegetable Stock
Method
Place all the ingredients in a large saucepan.
Bring everything to a gentle simmer
and cook for 40 minutes.
Let the soup cool for a few minutes and then blend. Serve topped with sunflower seeds.
