Celeriac Soup

Keeping with the Vegan theme here is another recipe which can be enjoyed by all the family. Celeriac is in season at the moment and this recipe is a lovely sweet and spicy combination. There is enough for 4 portions and it is perfect paired with homemade flatbreads. I’ve also made a short you-tube video if you prefer an audio visual.


Celeriac Soup – Serves 4
Shopping List
2 Onions – Diced
1 Yellow Pepper – Cut into Bite Sized Pieces
1 Green Chilli – Finely Chopped
1 Celeriac – Peeled and Cubed
1 Litre of Vegetable Stock
1 Eating Apple – Peeled and Diced
Method
Heat the Olive oil in a large saucepan.
Fry the onion on a medium heat, stirring frequently for about 5 minutes.
Add the yellow pepper and stir.
Stir in the green chilli, followed by the celeriac, vegetable stock and apple.
Bring the mixture to a gentle simmer, and continue to cook for about 35 minutes until the vegetables are tender.
Let the soup cool for a few minutes and then blend.
Serve with homemade flatbreads.
