Kidney Bean and Sesame Seed Curry – Serves 4
Shopping List
1 Tablespoon of Sunflower Oil
2 Onions – Sliced
2 Peppers – Cut into bite sized pieces
6 Baby Corns – Cut into bite sized pieces
2 Chillies - Sliced
3 Cloves of Garlic - Grated
Spice Mix:-
1/4 Teaspoon of Ground Cloves
1 Teaspoon of each of the following Paprika, Cumin, Ground Coriander and Crushed Dried Chilli.
1 Tablespoon of Turmeric
1 Tin of Chopped Tomatoes
1 Stock Cube
1/2 Tablespoon of Soft Dark Brown Sugar
1 Teaspoon of Salt
1 Tin of Kidney Beans
2 Tablespoons of ground Sesame Seeds
Juice of 1 Lime
50 Millilitres of Water
20g of Fresh Coriander - Chopped
Boiled Rice to Serve containing:-
20g of Fresh Coriander - Chopped
30g of Goji Berries (soaked in boiling water to rehydrate)
Method
Fry the onions in the sunflower oil on a medium heat for about 5 minutes. Add the peppers and baby corn and fry for a few minutes. Add the chillies and garlic. Stir in the spice mix. Add the tomatoes, , stock cube, sugar and salt and give the mixture a good stir. Next add the kidney beans, ground sesame seeds, lime juice, water and coriander. Simmer on a low heat for 25 minutes. Cook the rice, drain and then stir through the rehydrated goji berries and chopped coriander.
Serve with green vegetables of your choice.
