Leek and Lentil Soup– Serves 4

Shopping List

1 Onion – Diced

1 Leek – Peeled and Chopped

3 Sticks of Celery – Chopped

2 Carrots – Peeled and Chopped

2 Sweet Potatoes - Peeled and Diced

1 Tin or Carton of Green Lentils

1 Litre of Vegetable Stock

Method

Place all the ingredients in a large saucepan.

Bring everything to a gentle simmer

and cook for 40 minutes.

Let the soup cool for a few minutes and then blend. Serve topped with walnut pieces
