Spicy Beans and Rice

Spicy Beans and Rice – Serves 4

Shopping List

1 Tablespoon of Olive Oil

1 Onion - Diced

1 Yellow Pepper – Cut into bite sized pieces

2 Cloves of Garlic - Grated

2 Chillies - Sliced

1 Teaspoon of each of the following Paprika, Cumin, Ground Coriander and Chipotle Chilli Flakes.

2 Tomatoes - Diced

1 Tin of Chopped Tomatoes

1 Tin of Kidney Beans

2 Tins of Black Beans

1 Tablespoon of Tomato Puree

1/2 Tablespoon of Soft Dark Brown Sugar

Juice of 1 Lime

1 Stock Cube

50 Millilitres of Water

Boiled Rice to Serve containing:-

20g of Fresh Coriander - Chopped

30g of Goji Berries (soaked in boiling water to rehydrate)

Method

Fry the onions in the olive oil on a medium heat for about 5 minutes. Add the yellow pepper and fry for a few minutes. Add the chillies and garlic. Stir in the spice mix. Add the rest of the ingredients and simmer on a low heat for 25 minutes. Cook the rice, drain and then stir through the rehydrated goji berries and chopped coriander.

Serve with green vegetables of your choice.
